Fesenjaan Chicken (chicken in pomegranate walnut sauce)

The recipe calls for pomegranate syrup and water, but we used pomegranate juice and water instead. (2/3 syrup to 2 cups water, vs 2 cups pomegranate juice to 1 cup water)

Fry 2 onions until translucent
Three cloves of minced garlic
Cinnamon and nutmeg
Mixed in with onions as they fry
Then, add salt, pepper, sugar, pomegranate juice to onions etc.
Add two cups finely ground walnuts (or half and half almonds/cashews, for those allergic to walnuts)
Cook for half hour at low boil
Add chicken and cook together for another hour or so.
Adding, about halfway through the cooking time, between 1/3-1/2 cup lime juice.

Adas Polo (rice and lentils with fruit and spices)

Cinnamon, nutmeg, salt, pepper, turmeric, cumin.
Fry onions and garlic together
Mix with spices.
Mix in 3/4 cup chopped dates, 3/4 cup raisins.
Set aside.
Cook two cups rice, 1 1/2 cups lentils, separately.
Mix lentils with spice and fruit.

Cover bottom of pot with oil.
Slice a potato thinly, cover bottom of pot with potato slices.
Layer alternating layers of rice and lentils, ending in a layer of rice.
Cover with a towel – make sure towel is actually in contact with rice.
Cook.

This should be served by flipping it over, forming a pretty tower. For us, the tower collapsed and it ended up being served in a bowl.

The layer of potatoes is called tadig, literally “bottom of the pot”, and is especially delicious.

Sabzi Khordan Inspired salad

Sabzi khordan is a dish of fresh herbs served as a side dish at Iranian meals and certain other cuisines in the region.

Rather than just serving herbs, we decided to make a salad.

Ingredients:
Romaine lettuce finely chopped
Cucumbers with actual flavor, finely chopped
Fresh Parsley, finely chopped
Fresh dill, finely chopped

Note:

While each individual dish was delicious, the flavors were very different – the chicken tangy, the rice sweet, the salad very… Herbal… And I’m not sure I’d recommend eating all three together at the same meal, as they are very distinct.
