The latest entry in my battle with my body to insert calories and nutrients is jacket mashed potatoes with cheese.
A very simple, easy recipe.
Step one: wash a potato or multiple potatoes. Stab with fork. Insert into microwave for 5+ minutes.
Step two: cut open potato. Scoop out most but not all of the potato (you want to leave a shell of potato but not a super think thick one.
Step three: mash up the scooped up potatoes, mix in yogurt/butter, shredded cheese, spices to taste, parmesan if you’re in the mood.
Step four: scoop mash back into potatoes shells
Step five: cover with cheese
Step six: insert into oven, with flame on top, not below– you want to melt/crisp the cheese cover.
