My father makes the best pasta with sauce.
Tonight I craved it a lot. So I made my own.
Step one: cut up garlic, onion, pepper. If you have other good pasta veggies go wild, (but all we had was lettuce, cucumbers, and roots veggies…)
I used a 3-4 cloves of garlic, one small onion, one red pepper.
Step two: saute garlic and onion in oil. Add spices.
I added: oregano, cardamom, some black pepper
Step three: while garlic and onion sautée (but towards the end, not the beginning) put water on to boil
Step four: add peppers, tomato sauce, optionally butter or milk to sauce.
Step five: water boiled. Put pasta in.
Step six: add cheese to sauce
Optional step seven: put almost cooked pasta to finish cooking in the sauce. Alternately, let pasta cook completely, drain, and add sauce to it when served.
Optional step eight: add additional cheese of whatever variety, to taste.
