Apple schnapps cake

Due to a bit of a misunderstanding, we ended up with an entire bottle of apple schnapps we thought was kosher for pesach – but, it wasn’t.

So now we have to get rid of a lot of apple schnapps.

Enter apple schnapps cake.

I found a few other recipes on Google (this one and this one, for the curious) but my husband told me to go with this one. Of the three choices it was by far the least patchke-y.

Here’s what I made (a modification of the original)

2 ½ cups all-purpose flour

2 cups sugar (I wanted to use some brown sugar, but didn’t. Maybe next time)

¼ teaspoon baking powder

1 ½ teaspoons baking soda

1 ½ teaspoons salt

¾ teaspoon cinnamon

½ teaspoon cloves

¼ teaspoon nutmeg

½ cup margarine (half an Israeli bar)

½ cup apple schnapps

1 ½ cups applesauce

2 large eggs

1 apple, optional, for garnish

(I skipped the nuts and the raisins that the original recipe called for)

Cream margarine, add applesauce and apple schnapps, beat well.

Add dry ingredients and beat.

Add eggs and beat.

Grease and flour pan.

Pour better into pan. Slice apple into thin slices and arrange decoratively.

Bake at 350℉ (180℃) until fork comes out clean. Original recipe said 45 minutes but that was in a bundt pan. I have no idea how long ours took- our oven timer broke.
