We made a heavily modified version of this recipe yesterday and it came out pretty good

Substituted nile perch for catfish

About 2 tsp of ginger powder for the fresh ginger

 About a tsp of red pepper flakes for the chili peppers

White sugar for coconut sugar (if it’s not white it’s impossible to tell when it caramelizes)

Skipped coriander completely

Used canned coconut liquid (NOT coconut milk)
Crockpot for five hours (we used a shabbos clock)
